If I were you, I would definitely not accept the crummy offer from CUHK LLM program this year, you are a grauate of a top rated University in China with an overall GPA 3.6, which can place you among the top performers of the program according to general assesment method,if you can improve your IELTS to 7, I think you could be very competitive in admission to top ranked LLM program globally. I have no doubt ,your credential would set yourself apart from a pool of highly qualified applicants, if you can add an additional feather to your cap, that is the Chinese bar certificate.
In my humble opinion, the roadmap is crystal clear for your case, go for bar exam and do everything in your power to sail through it, in the meantime, please embark on sustained study of English language preparatory for your future study of common law or other specialist subjects.
If you have pulished journal articles which are of questionable quality, I believe it's not a good idea to do publicity about them to professors,first of all, you are not going to read a research degree, thus, your publication track record will not become a vital parameter in their assessment of your application,secondly,the admissions team mainly look at hard stats about your dossier,i.e rank of the school graduated from, oveall GPA, IELTS score etc
I think you can get into better master of laws programs at least in Asia, for instance, HKU,NUS etc, if you are willing to pay through nose for your LLM in the states, I think you can get offer from top ranked law schools as well.
