With so many restaurants dotting the urban landscape, many become so _____ when confronted with plethoric choice that, almost by default, they opt to dine in.

uncaring
indecisive
flummoxed
defiant
irresolute
phlegmatic
答案是下划线的那两个，我选对了，但when后面那个部分死活看不懂啊。原因有两个：

1）almost by default怎么理解？
2）that they opt to dine是修饰前面的plethoric choice的吗？

如果有可能，希望有人简单翻译一下when后面的内容。

这题不是就 when people have many choices in dining, they will arbitrarily choose one place to go.
almost by default可以随意理解成arbitrarily or routinely or indiscriminately

2) 不是，这是他们的动作, when they have many choices, they choose to do what.

这个句子的主句是一个so that结构。when后面到逗号前面是条件状语修饰so indecisive/resolute。
翻译：很多人在面临过量的选择的时候变得如此indecisive以致于他们几乎默认得选择在家吃饭。
因为选择太多，决定不了，所以索性就在家吃不去restaurant了。
这里有个词组，dine in = eat at home，相反地，dine out = eat in restaurant。
