纠正下, 蛋白质变性不是坏事是好事

另外泡菜不算是典型的腌制食品泡菜是有氧发酵,可以防癌

腌菜是无氧发酵,致癌

腌菜是无氧发酵,致癌

再纠正下
蛋白质变性有利于消化吸收,可是食品中蛋白质变性不一定意味着里面的细菌也变性,反而可能误导一些人不再去加热该食品而吃
泡菜是无氧发酵,要不怎么来的乳酸啊,防癌这一说有待商榷
腌菜是所说的咸菜不?腌过一定的日子,硝酸盐的含量下降了就没有多大问题了
当然这是目前的说法
