An Italian Cuisine to Share
本帖最后由 HK_House 于 2013-9-5 01:02 编辑Hi folks, today I am going to present the new Italian dish that I made for dinner. Actually, there were two dishes but I just put them on the same plate.
"Spiedini di carne all Toscane" in English is called Tuscan Steak and Sausage Skewers, which is based on an old Tuscan recipe for skewered sausages and pig's liver wrapped in caul between crispy bread and herbs. But, I didn't have pig's liver in my kitchen, and in fact, it is difficult to find in local supermarket, so I use pork tenderloin instead. Maybe it is a bit less authentic, but it doesn't affect the taste much. The meat and bread absorb the aroma and flavor from the rosemary and bay leaves, which makes the meat absolutely fragrant. The meat is so tender and juicy after roasting for about 25 minutes, and the meat matches perfectly with the crunchy bread which provides different textures for every bite. It is definitely a perfect cuisine for meat lovers. And it is also one of my favorite dishes.
For the side dish, it is called Insalata di couscous al limone, which is Lemon Couscous Salad in English. It is easy to make and doesn't not need many steps. But, I am not going to write the recipe right now. Maybe next time when I feel like to do so. The pine nuts toast pretty well and enhance the flavor and crunchiness of this dish. But, I accidentally add too much lemon juice so the sourness is a bit overpowered the sweetness of pine nuts and couscous. In addition, I also added some finely chopped sage leaves and lemon zest to strengthen the aroma. I don't know why they call it salad because there is no much green in it. Maybe Italian just like to call non-meat dishes salad? Anyway, I hope you guys enjoy! Have a great weekend!

意大利人对insalata定义跟美国人的salad不太一样，基本上冷盘都可以叫insalata，除了insalata di riso (rice salad)，还有insalata di mare (sea salad)，这个基本上就是一盘海鲜。
呃完美主义发作，忍不住说下spiedini di carne all toscane这个语法有误。。。应为spiedini di carne alla toscana，或者直接说spiedini toscani di carne。意大利语名词分阴阳性，决定前面跟的冠词，整个短语/句子阴阳性也要保持一致等等。另外这个短语直译过来是Tuscan meat skewer，没有香肠的说。。。抱歉歪个楼，菜还是很赞的 深海lavender 发表于 2013-9-11 09:21 static/image/common/back.gif
