"how many" is the limitation for the NOUN...countable  可数名词
"how much" is for the uncountable;
we can add the "much" ahead of the adj (only the comparative form, like "more")
for the adj like "high" or "low"... how is enough...

the correct sentence should be
The pitch of a [musical] note--[how] high or low the sound is--[depends] on [its] wavelength.
